Chicken Parmesean Meatloaf

•1lb ground chicken (can also use turkey)

•2-3 finely chopped garlic cloves

•1/2 chopped onion

•2 eggs

•panko crumbs, enough to just soak up the moisture

•1/2 cup marinara sauce + more for on top

•3/4 cup of mozzarella or parmesan cheese

•fresh mozzarella for top, if desired.

•fresh chopped basil and parsley

•Salt & pepper of course


•Preheat oven to 375 degrees.

•Mix everything together and form into a loaf on a sprayed baking sheet.

•Bake for around 1 hour. After 40 minutes spoon marinara sauce over top and place fresh mozzarella slices over it, if desired. Garnish with fresh basil.


I use any Italian cheese I have on hand and dried basil and parsley when I don’t have fresh herbs on hand.  Either way this dish is a crowd pleaser and great to have leftover if your family doesn’t devour it!
