Cashew Energy Balls

Recipe inspired from Deliciously Ella

INGREDIENTS:

  • 14 ounces medjool dates (pitted)

  • 3-4 ounces of oats

  • 3-4 ounces of raw cashews

  • 2 tablespoons of cashew butter

  • 2 tablespoons of coconut oil

INSTRUCTIONS:

Place the nuts and oats into a food processor and blend until they form a chunky flour, then add the pitted dates, coconut oil and cashew butter.

Blend everything up until a sticky mix form.

Roll the mixture into balls. They’re nice straight away, but they’re even nicer when they’ve set a little in the fridge so try to give them twenty minutes or so before eating.

NOTES:

I use a cookie dough scooper to help form the balls.  These will last a few weeks, but if you want them to last longer/you don’t eat them all at once, then I suggest freezing some in an air tight container.
