Meal Plan Sweet Potato Brussels Sprout One Pan Skillet Meal

INGREDIENTS:

  • 1-2 Tbsp avocado or grapeseed oil, divided

  • 1 pound of pasture raised ground turkey or grass-fed beef

  • 1 red bell pepper, chopped

  • 1/2-1 white or red onion, chopped

  • 2 sweet potatoes, cleaned and chopped into cubes

  • 1 bag of shredded brussels sprouts

  • 1-2 Tbsp Taco seasoning

  • 1 tsp sea salt (only if your Taco seasoning is salt-free)

  • 2 avocados (roughly 1/4 avocado per person)

  • Toppings: cilantro, jalapano and clean hot sauce (optional)

INSTRUCTIONS:

  • ln a large skillet over medium high heat and add 1/2-1 Tbsp oil. Add the ground meat and saute for about 5-7 minutes until browned, breaking the meat up into small pieces as it cooks. Add 1/2-1 Tbsp of taco seasoning and stir to combine. If using higher fat meat you won’t need as much oil.

  • Remove turkey from pan and cover so that the meat stays warm.

  • Add another 1/2-1 Tbsp of oil to the pan and over medium-high heat add the chopped onion and cook for a few minutes. Add the sweet potatoes and peppers and cook for 3-5 minutes, covered. Uncover the pan and add the shaved brussels sprouts, cooking for about 5 more minutes until cooked to your desired preference. Sprinkle another 1/2-1 Tbsp of taco seasoning to the veggies and combine.

NOTES:

  • You can either combine meat back into the pan with the veggies or serve it separately as shown in the photo.

  • Top with avocado, cilantro and jalapano (optional) and enjoy!
