Cacao Avocado Cookies

Kid Friendly Cacao Avocado Cookies

INGREDIENTS:

  • 1 1/2 ripe avocados (2 if they are really small)

  • 1/2 cup cacao powder

  • 1/2 cup coconut sugar

  • 1/4 cup dark chocolate chips

  • 1/2 tsp baking soda

  • pinch of sea salt

Optional: 1/4 tsp of pure vanilla extract. You can also add some flaky sea salt on top of the cookies right before you bake them.

INSTRUCTIONS:

  • Pre-heat over to 350 degrees.

  • Add all ingredients except for the optional flaky salt to a small blender and puree until ingredients are combined. Itโ€™s ok if there are still some small pieces of avocado visible in the batter. You can also mash the avocado first and then add the remaining ingredients until well combined.

  • Spray a cookie sheet with avocado oil or use a Silpat liner (I love these) and then form a small cookie scoop amount of dough on the baking sheet. I like to flatten the cookies slightly before I bake them as they wonโ€™t change shape during the baking process.

  • Bake for 12-15 minutes.

  • Makes 12 bite-sized cookies

  • I recommend refrigerating these cookies if they last longer than a day in your house ๐Ÿ˜Š.

  • You can also use frozen avocado chunks and thaw them.
