Easy Meal Prep Pumpkin Spice Overnight Oats

INGREDIENTS:

  • 1/4 cup steel cut oats (see below for soaking instructions)

  • ¾ cup unsweetened almond milk (you may also want to add a bit of milk in the morning)

  • 1/2 tsp pumpkin spice seasoning

  • 1/4-1/2 of a banana

  • 2-3 Tbsp pumpkin pie puree (plus more for topping, if desired)

  • 1 scoop of vanilla daily nutritional support or clean protein powder

  • Optional: recommend adding a healthy fat such as, flax or chia seeds, pumpkin seeds (great as a topping) or MCT Oil Powder . Top with a few additional banana slices, if desired.

INSTRUCTIONS:

  1. Soak steel cut oats in very hot water for 15 minutes. Alternatively, you can use old-fashion oats and skip this step.

  2. Mash banana in your mason jar or other container.

  3. Stir in oats and milk and then mix with remaining ingredients. 

  4. Put in fridge overnight. 

  5. When you wake up in the morning you’ll have a delicious and energizing breakfast ready to grab and go!

NOTES:

  • I love to make a double or triple batch and store in separate mason jars in the fridge for a quick breakfast when you’re in a hurry.
